Mango Mousse

Today was hot - and I mean, full-fledged-summertime, 100-degree-weather hot. I spent the day at my parents’ house to visit and, let’s face it, take full advantage of their air conditioning…

My dad got a new grill recently and any excuse to use it is, of course, a good one. So we made hamburgers and hotdogs, I cut up some watermelon, and had the perfect summertime feast.

One thing that was not typical for an outdoor summertime meal, however, is this mango mousse my mom and I made. She got the recipe from her best friend, who is Brazilian and said that this is a pretty typical treat for them in Brazil. 

Here’s how it’s made:

  • 2 large mangos, peeled and chopped (I’m told you can use any fruit that’s in season)
  • 1 cup yogurt (plain or vanilla)
  • 1 can sweetened condensed milk (you can use less if your fruit is sweet, but ours were so sour!)

Put all your ingredients into a blender and blend until smooth. We refrigerated it to thicken it up a little before serving. When it was ready, it had the consistency of instant pudding.

You can eat it straight or serve it over angel food cake… or pound cake… mmmmm!

Optional: My mother’s friend also said she adds in finely ground flaxseed powder to help her justify eating it… haha! We did not add any into ours, but I was not expecting mine to be even close to healthy…

But it was delicious!
