Chocolate Banana Cookie …Milkshake?
I struggle calling this recipe a milkshake because it contains no milk or ice cream, but I can’t really call it a smoothie, either, because well, it’s not totally healthy…
Delicious? YES.
The taste reminds me of chocolate chip banana bread or chocolate banana cream pie, including the crust. It’s so good!
Here’s the recipe:
1 frozen medium-sized banana
1 heaping teaspoon of chocolate milk powder or syrup (I used Nesquik powder, it’s pre-sweetened so you don’t need to add additional sweetener)
1 teaspoon of Trader Joe’s Cookie Butter (also sweet)
1 cup of almond milk (I used plain, I’m sure vanilla would taste good, too)
Blend it all together until smooth, serve in a tall glass.
Like I said, no milk or ice cream, but tastes like there is! Not sure if the cookie butter and chocolate milk mix keep it healthy, but at least there’s fruit in it… Redeeming quality? High-res

Healthy, vegan fudgsicles!

In the heat of summer, there is nothing quite like an icy cold fudgsicle. They remind me of being a kid, and specifically, waiting for the ice-cream truck that would make its rounds in my neighborhood.

Today, I had a craving for those chocolaty treats, but there’s no ice cream truck where I’m living now (sad face!). However, I have a Zoku popsicle maker and was able to find this healthier recipe online. It’s delicious!

Here’s the recipe (with my modifications):

(Makes 5-6 Zoku-sized popsicles)

  • 1/2 cup coconut milk (she said full-fat canned, I used the boxed kind from Trader Joe’s)
  • 2 tbsp cocoa powder
  • 2 small, very-ripe bananas (mine were frozen, but I don’t think it matters)
  • scant 1/16 tsp salt (I used sea-salt)
  • 1/2 tsp pure vanilla extract
  • sweetener of choice, to taste (I used a teaspoon or so of honey, but if you’re vegan, agave nectar or simple syrup would work!)

Combine all items in a blender, pour into popsicle molds, and freeze. That’s it!

If you’re using traditional popsicles molds, freeze time depends on how small or large your molds are, but it’d be best to freeze overnight. If you’re using a Zoku, it takes about 10 minutes! You can guess which one I prefer…

I could not believe how creamy and delicious they were - you can hardly taste the banana or the coconut milk at all - just chocolaty goodness :)

Have you ever noticed that sometimes the littlest things make you happy? There are three things that I keep in my purse at all times because of just that:
1. l’occitane hand cream. The Desert Rose or Cherry Princess scents are my favorites, because they do more than just moisturize; they also smell fantastic and feminine. I get compliments every time I wear them!
2. Lip/Cheek stain. It’s another of those multi-taskers that’s easy to carry and can add a bit of color to an otherwise dreary day. If my makeup has worn off and I’m feeling a bit pale, this is the solution!
3. Chocolate. I call it my “Emergency Chocolate” and every girl should have some in her purse! Chocolate makes the roughest days seem better, even just one or two of these little pearls can do the trick! GET SOME! You know, in case of emergencies.
